  • 8 tablespoons unsalted butter (melted and cooled)
  • 1/2 cup all-purpose gluten-free flour blend
  • 1/4 teaspoon xanthan gum Essential for texture
  • 1 cup old-fashioned rolled oats
  • 1/4 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1/8 teaspoon kosher salt
  • 1/4 teaspoon baking powder
  • 1/2 cup granulated sugar (for blueberry filling) Add the sugar to the blueberries
  • 1/4 cup old-fashioned rolled oats (for crumbling)
  • 6 tablespoons unsalted butter (melted and cooled for topping)
  • 1 egg (beaten) Can be substituted with flax egg for vegan option
  • 1 to 2 tablespoons lukewarm water
For the blueberry filling
  • 2 cups fresh blueberries (rinsed and patted dry) Fresh blueberries yield the best flavor
  • 2 tablespoons granulated sugar
  • 2 tablespoons oat flour
  • 1/8 teaspoon kosher salt

Method
 

Preparation
  1. Preheat your oven to 325°F and grease a 9-inch square baking pan, lining it with parchment paper.
  2. For the crumble topping, combine oats, flour, and sugar. Set aside.
  3. For the crust, mix melted butter, oats, gluten-free flour, and sugars until well combined. Press this mixture into the bottom of the pan.
  4. Prepare the blueberry filling by mixing blueberries with sugar and oat flour. Spread this over the crust.
  5. Sprinkle the crumble topping generously over the blueberries.
Baking
  1. Bake for about 30-35 minutes, until the edges turn golden and the house smells divine.
  2. Allow to cool before slicing—trust me, your patience will be rewarded.

Notes

For serving, top with whipped cream or ice cream, and consider adding a sprinkle of cinnamon.
