  • 2 pounds baby potatoes Use waxy potatoes for best texture.
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced Toasted for best flavor.
  • 1/2 cup grated Parmesan cheese Can substitute with nutritional yeast for a vegan option.
  • Salt and pepper, to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain and let them cool slightly.
Baking
  1. On a baking sheet, arrange the potatoes and gently crush each one with a fork or potato masher.
  2. Drizzle olive oil and sprinkle minced garlic, salt, and pepper over the top.
  3. Bake for 20-25 minutes or until crispy and golden.
  4. Once out of the oven, sprinkle Parmesan cheese over the potatoes and return to the oven for an additional 5 minutes.
  5. Garnish with fresh parsley if desired and serve hot.

Notes

Feel free to add fresh herbs or spices before baking for an extra flavor kick. For a richer finish, drizzle melted butter on top after baking.
