Cooking the Pasta
- Bring a large pot of salted water to a boil.
- Cook spaghetti until al dente, then drain and set aside.
Preparing the Sausage and Sauce
- In a large skillet, heat olive oil over medium heat.
- Add sausage, crumble as it cooks, and sauté until browned.
- Remove sausage from the skillet and set aside.
- In the same skillet, add butter and minced garlic; cook for 1 minute until fragrant.
- Add spinach and sauté until wilted.
Combining Ingredients
- Return the cooked sausage to the skillet.
- Add drained spaghetti and toss to coat noodles in garlic butter.
- Sprinkle mozzarella and Parmesan on top; cover and let cheese melt for 2-3 minutes.
- Season with salt and pepper to taste, toss gently, and serve hot.
Notes
For extra flavor, add a pinch of red pepper flakes when sautéing garlic. Leftovers can be stored in the fridge for 3-4 days; freeze for up to 3 months. Reheat with a splash of water or broth.
