Ingredients
  

Pasta and Sauce Base
  • 400 g spaghetti Use whole wheat spaghetti for added fiber.
  • 1 tablespoon olive oil For sautéing the sausage.
  • 4 tablespoons butter To add richness to the sauce.
  • 4 cloves garlic, minced Essential for flavor; do not skip toasting.
Proteins and Greens
  • 250 g Italian sausage Can be substituted with turkey sausage.
  • 3 cups fresh spinach Avoid overcooking to keep vibrant.
Cheese Toppings
  • 1 cup shredded mozzarella cheese Provides gooey texture.
  • 1/3 cup grated Parmesan cheese Adds a salty finish.
Seasoning

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil.
  2. Cook spaghetti until al dente, then drain and set aside.
Preparing the Sausage and Sauce
  1. In a large skillet, heat olive oil over medium heat.
  2. Add sausage, crumble as it cooks, and sauté until browned.
  3. Remove sausage from the skillet and set aside.
  4. In the same skillet, add butter and minced garlic; cook for 1 minute until fragrant.
  5. Add spinach and sauté until wilted.
Combining Ingredients
  1. Return the cooked sausage to the skillet.
  2. Add drained spaghetti and toss to coat noodles in garlic butter.
  3. Sprinkle mozzarella and Parmesan on top; cover and let cheese melt for 2-3 minutes.
  4. Season with salt and pepper to taste, toss gently, and serve hot.

Notes

For extra flavor, add a pinch of red pepper flakes when sautéing garlic. Leftovers can be stored in the fridge for 3-4 days; freeze for up to 3 months. Reheat with a splash of water or broth.
