- Cook the chow mein noodles according to package instructions and set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add the minced garlic and stir-fry for about 30 seconds.
- Toss in the mixed vegetables and stir-fry until tender but still crisp, about 3-4 minutes.
- Add the cooked noodles to the skillet.
- Pour the soy sauce and optional oyster sauce over the noodles and toss to combine.
- Stir in the sliced green onions and season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
For added flavor, drizzle a bit of sesame oil or top with sesame seeds. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for a month.
