  • 0.25 teaspoon xanthan gum Optional, for improved texture.
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon kosher salt
  • 2 tablespoons granulated sugar Add up to 1/4 cup for sweeter pancakes.
Wet Ingredients
  • 1 egg At room temperature, beaten.
  • 1.25 cups milk At room temperature.
  • 1 teaspoon pure vanilla extract Optional for flavor.

Preparation

Cooking

  2. Pour the batter into the pan and cook until bubbles form, then flip and cook until golden.

Notes

Keep room temperature ingredients on hand to achieve the perfect fluffiness. Feel free to replace milk with non-dairy alternatives. Avoid overmixing, as this will keep the batter light and airy.
