Butter and Sweeteners
  • 1/2 cup unsalted butter (softened) Keep the butter softened for best texture.
  • 1/2 cup brown sugar
Wet Ingredients
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 3 tablespoons almond milk (or any milk you prefer)
Dry Ingredients
  • 1 1/4 cup almond flour (superfine) You can substitute with oat flour or gluten-free all-purpose flour.
  • 1/2 cup semi-sweet chocolate chips Fold in for the classic cookie dough experience.

Preparation
  1. Using a hand mixer, beat together the butter and brown sugar until light and fluffy.
  2. Add the vanilla, almond milk, and salt. Mix until all flavors mingle beautifully.
  3. Add the almond flour and mix until fully incorporated.
  4. Fold in the chocolate chips.
  5. Eat immediately, or chill for 15 minutes for an even cooler experience.

Notes

For a vegan version, swap butter for coconut oil and use a flaxseed egg instead of milk. Add a pinch of cinnamon for a cozy twist.
