Brownie Ingredients
  • 1 cup unsalted butter Melted
  • 2 cups granulated sugar
  • 4 large eggs Room temperature
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon instant coffee granules
Topping Ingredients
  • 1 cup mascarpone cheese Room temperature
  • 1/2 cup heavy cream Whipped to stiff peaks
  • 1/4 cup powdered sugar
  • to taste Cocoa powder for dusting

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, melt the butter and mix in the granulated sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, salt, and instant coffee granules.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Pour the brownie batter into the prepared baking dish and spread it evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the brownies to cool completely.
  9. In another bowl, whip the heavy cream with the powdered sugar until stiff peaks form.
  10. Gently fold in the mascarpone cheese until smooth.
  11. Spread the mascarpone mixture over the cooled brownies.
  12. Dust with cocoa powder before serving.
  13. Cut into squares and enjoy!

Notes

For best flavor, refrigerate brownies for a few hours before serving. Serve warm with ice cream or drizzle with espresso.
