  • 1 lb boneless, skinless chicken breasts Place at the bottom of the slow cooker.
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chiles
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add in the white beans, corn, diced green chiles, chopped onion, minced garlic, chicken broth, cumin, chili powder, salt, and pepper.
  3. Stir to combine and make sure the chicken is submerged in the liquid.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. About 30 minutes before serving, shred the chicken directly in the slow cooker using two forks.
  3. Stir to combine everything and serve hot, with optional toppings as desired.

Notes

For deeper flavors, consider cooking on low for the full 8 hours. You can also spice it up by adding a diced jalapeƱo or hot sauce. For extra creaminess, stir in a splash of heavy cream or sour cream towards the end.
