Preparation
- Place the chicken breasts at the bottom of the slow cooker.
- Add in the white beans, corn, diced green chiles, chopped onion, minced garlic, chicken broth, cumin, chili powder, salt, and pepper.
- Stir to combine and make sure the chicken is submerged in the liquid.
Cooking
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, shred the chicken directly in the slow cooker using two forks.
- Stir to combine everything and serve hot, with optional toppings as desired.
Notes
For deeper flavors, consider cooking on low for the full 8 hours. You can also spice it up by adding a diced jalapeƱo or hot sauce. For extra creaminess, stir in a splash of heavy cream or sour cream towards the end.
