  • 8 oz egg noodles Can substitute with gluten-free pasta if needed.
  • 2 tablespoons butter For finishing the dish.
  • 1 cup chicken broth Add more if needed during reheating.
  • 2 tablespoons olive oil For cooking chicken.
  • to taste Salt Season to taste.
  • to taste pepper Season to taste.
  • to garnish Parsley Optional, for serving.

Method
 

Cooking Chicken
  1. In a large pan, heat olive oil over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the pan.
  3. Cook for about 5-6 minutes on each side until golden brown and cooked through.
  4. Remove from pan and set aside.
Cooking Noodles
  1. In the same pan, add chicken broth and bring to a simmer.
  2. Add egg noodles and cook according to package instructions until tender.
  3. Once noodles are cooked, stir in butter until melted.
  4. Slice the cooked chicken and return it to the pan, stirring everything together.
Serving
  1. Garnish with parsley if desired, serve, and enjoy!

Notes

This dish keeps well in the fridge for about 3-4 days. Store in an airtight container. Reheat with a splash of broth if it seems dry.
