  • 1 pound ground chicken
  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans (15 oz), rinsed and drained
  • 1 can black beans (15 oz), rinsed and drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced Toasting enhances flavor.
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 2 cups chicken broth

Method
 

Cooking
  1. In a large pot, cook the ground chicken over medium heat until browned.
  2. Add the chopped onion, bell pepper, and garlic; sauté until softened.
  3. Stir in the diced tomatoes, kidney beans, black beans, chili powder, cumin, salt, and pepper.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and let it simmer for 20-30 minutes.
  6. Serve hot and enjoy!

Notes

For a spicy kick, add diced jalapeños or crushed red pepper. This chili can be made in advance and frozen for later.
