  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese Use fresh for better flavor.
  • 1 cup breadcrumbs
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for healthier option.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional) Adds color and freshness.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the mayonnaise, garlic powder, onion powder, salt, and pepper.
  3. In another bowl, combine the grated Parmesan cheese and breadcrumbs.
  4. Coat each chicken breast with the mayonnaise mixture, then press it into the Parmesan-breadcrumb mixture to coat evenly.
  5. Place the coated chicken breasts on a baking sheet lined with parchment paper.
Cooking
  1. Bake for about 25-30 minutes, or until the chicken is cooked through and the crust is golden brown.
  2. Garnish with fresh parsley if desired, and serve warm.

Notes

This chicken keeps well in the fridge for 3-4 days. Store in an airtight container. For longer storage, freeze it for up to 2 months.
