Ingredients
  

For the Salmon
  • 2 fillets salmon fillets Fresh salmon fillets
  • to taste Salt and pepper Used for seasoning
  • 1 tablespoon olive oil For grilling the salmon
For the Mango Salsa
  • 1 ripe mango, diced Use the ripest mango for the best flavor
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced Adjust spiciness as preferred
  • 1 tablespoon lime juice Freshly squeezed lime juice
  • to taste Fresh cilantro, chopped Optional garnish

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season the salmon fillets with salt, pepper, and olive oil.
Grilling
  1. Grill the salmon for about 4-5 minutes on each side, or until cooked through.
Making the Salsa
  1. In a bowl, combine the diced mango, red onion, jalapeño, lime juice, and cilantro.
Serving
  1. Top the grilled salmon with the mango salsa and serve warm.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge. The salmon can be frozen separately from the salsa.
