Ingredients
  

Main Ingredients
  • 1 can canned chickpeas, well-rinsed
  • 1 cup grated carrots
  • 1 cup finely chopped bell peppers
  • 2 cloves minced garlic Don't skip the garlic for added flavor!
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup gluten-free oat flour Can substitute with almond flour or rice flour.
  • 2 tablespoons olive oil For frying the patties.
  • 1 cup chopped spinach
  • 1 teaspoon smoked paprika
  • 1 teaspoon lemon zest

Method
 

Preparation
  1. In a large bowl, mash the chickpeas with a fork, leaving some chunks for texture.
  2. Add the grated carrots, bell peppers, minced garlic, parsley, cumin, salt, black pepper, oat flour, spinach, smoked paprika, and lemon zest. Mix well until combined.
  3. Form the mixture into patties, about the size of your palm.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Fry the patties for 3-4 minutes on each side until golden brown.
  3. Serve hot and enjoy!

Notes

These patties can be served on a fresh lettuce bed, drizzled with tahini sauce, or tucked into a warm pita pocket. Store in the fridge for up to 3 days or freeze for up to a month.
