- In a large bowl, mash the chickpeas with a fork, leaving some chunks for texture.
- Add the grated carrots, bell peppers, minced garlic, parsley, cumin, salt, black pepper, oat flour, spinach, smoked paprika, and lemon zest. Mix well until combined.
- Form the mixture into patties, about the size of your palm.
Cooking
- Heat olive oil in a skillet over medium heat.
- Fry the patties for 3-4 minutes on each side until golden brown.
- Serve hot and enjoy!
Notes
These patties can be served on a fresh lettuce bed, drizzled with tahini sauce, or tucked into a warm pita pocket. Store in the fridge for up to 3 days or freeze for up to a month.
