  • 1/2 cup shredded cheese (optional) Use your favorite type of cheese.
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing the baking dish

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
  3. Stir in the mixed vegetables, salt, and pepper.
  4. Grease a baking dish with olive oil or cooking spray.
  5. Pour the egg mixture into the prepared baking dish.
  6. If using, sprinkle shredded cheese on top.
  7. Bake for 25-30 minutes or until the egg is set and lightly golden.
  8. Let it cool for a few minutes before slicing and serving.

Notes

Leftovers can be stored in an airtight container for about 3-5 days. Freeze for up to 2 months and reheat in the microwave for quick breakfasts.
