Preparation and Baking
- Preheat the oven to 375°F (190°C) and grease a large baking dish with a bit of olive oil or cooking spray.
- In a large bowl, combine the bite-sized chicken pieces with diced zucchini and onion. Toss it all together.
- Drizzle the olive oil, then toss in the minced garlic, smoked paprika, cumin, oregano, salt, and pepper, ensuring every piece is well-coated.
- Transfer the seasoned mixture to the prepared baking dish, spreading it out in a single layer. Bake for 25-30 minutes until the chicken reaches 165°F and the zucchini is tender.
- Remove from the oven and sprinkle with fresh herbs and an extra pinch of smoked paprika. Serve it over warm, inviting rice.
Notes
You can prep everything ahead of time and keep it covered in the fridge until ready to bake. Adjust cooking time if starting from cold.
