  • 4 large flour tortillas
  • 2 cups cooked chicken (shredded) You can use rotisserie chicken for convenience.
  • 8 slices bacon (cooked and crumbled)
  • 2 cups Mexican cheese blend (shredded) Feel free to experiment with different cheese types.
  • 1/2 cup ranch dressing
  • 1 cup tomatoes (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tablespoons fresh cilantro (chopped)
  • 2 tablespoons butter (for cooking)

Method
 

Preparation
  1. In a bowl, mix the shredded chicken with ranch dressing.
  2. Add the crumbled bacon, diced tomatoes, chopped onion, and cilantro. Mix well.
  3. Layer a tortilla with some cheese, followed by the chicken mixture, and then more cheese.
  4. Fold the tortilla in half.
Cooking
  1. Melt butter in a skillet over medium heat.
  2. Cook each quesadilla for 2-3 minutes per side until golden brown.

Notes

Serve with extra ranch dressing or spicy salsa. You can store leftovers in the fridge for about 3 days or freeze for up to a month. Reheat on the stovetop or microwave.
