Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, milk, mashed bananas, Greek yogurt, honey, baking powder, vanilla extract, and cinnamon until well combined.
- If desired, fold in the mixed berries and nuts or seeds.
- Pour the mixture into a greased baking dish and spread evenly.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and the oats are set.
- Allow to cool slightly before slicing into squares.
Storage
- Store in the refrigerator for a convenient breakfast throughout the week.
Notes
For added sweetness, drizzle more honey on top or add a dollop of yogurt when serving. You can also store it in the freezer for up to 3 months—just slice and wrap individual pieces.
