  • 2 cups rolled oats
  • 1 cup milk (or dairy alternative)
  • 2 ripe bananas, mashed
  • 1/2 cup Greek yogurt
  • 1/4 cup honey (or maple syrup)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

  • 1/2 cup mixed berries optional
  • 1/4 cup nuts or seeds optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, milk, mashed bananas, Greek yogurt, honey, baking powder, vanilla extract, and cinnamon until well combined.
  3. If desired, fold in the mixed berries and nuts or seeds.
  4. Pour the mixture into a greased baking dish and spread evenly.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the oats are set.
  2. Allow to cool slightly before slicing into squares.
Storage
  1. Store in the refrigerator for a convenient breakfast throughout the week.

Notes

For added sweetness, drizzle more honey on top or add a dollop of yogurt when serving. You can also store it in the freezer for up to 3 months—just slice and wrap individual pieces.
