Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, whisk together the eggs and Greek yogurt until smooth.
- Stir in the melted butter, baking powder, salt, xanthan gum, and almond flour until well combined.
- Pour the batter into your prepared loaf pan.
Baking
- Bake for about 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool a bit, then slice and enjoy!
Notes
For fluffier texture, use eggs at room temperature. You can swap coconut oil for butter for a tropical flavor.
