  • 6 large large eggs
  • 0.5 cup full-fat Greek yogurt (unsweetened and plain)
  • 1 tablespoon baking powder
  • 0.25 cup melted butter or coconut oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon xanthan gum or psyllium husk powder
  • 0.5 cup finely ground almond flour optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together the eggs and Greek yogurt until smooth.
  3. Stir in the melted butter, baking powder, salt, xanthan gum, and almond flour until well combined.
  4. Pour the batter into your prepared loaf pan.
Baking
  1. Bake for about 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool a bit, then slice and enjoy!

Notes

For fluffier texture, use eggs at room temperature. You can swap coconut oil for butter for a tropical flavor.
