  • 1 piece English cucumber or 2 Persian cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 8 oz mozzarella pearls or cubed fresh mozzarella
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh basil leaves, torn or chopped
Dressing Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or reduction
  • Salt and freshly ground black pepper, to taste
  • Optional: crushed red pepper flakes for a little kick

Method
 

Preparation
  1. Slice the cucumbers, halve the tomatoes, and thinly slice the red onion.
Mixing
  1. In a large bowl, combine the sliced cucumber, halved tomatoes, mozzarella, onion, and basil.
Dressing
  1. Drizzle everything with olive oil and balsamic glaze. Season with salt, pepper, and optional red pepper flakes for heat.
Finishing Touch
  1. Mix gently until all ingredients are coated in the dressing.
  2. Enjoy it right away or let it chill in the fridge for 15–30 minutes to meld those flavors beautifully.

Notes

Chill your ingredients for a more refreshing salad! You can swap mozzarella pearls for any fresh mozzarella you have. Throw in extra herbs like oregano or thyme for added flavor! This salad can hold up in the fridge for about 2-3 days but is best enjoyed fresh.
