- Place the chicken breasts in the crockpot.
- Add the sweet corn, white beans, diced tomatoes, onion, garlic, cumin, chili powder, salt, and pepper.
- Pour in the chicken broth.
- Stir everything to combine.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Before serving, shred the chicken with two forks and stir in the shredded pepper jack cheese until melted.

Notes
Don’t skip sautéing the garlic for added flavor. Serve with a sprinkle of cilantro and a squeeze of lime for extra freshness.
