  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) sweet corn, drained
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup chicken broth
  • 1 cup shredded pepper jack cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Sautéing is recommended for better flavor.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder Adjust to taste.
  • Salt and pepper to taste

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Add the sweet corn, white beans, diced tomatoes, onion, garlic, cumin, chili powder, salt, and pepper.
  3. Pour in the chicken broth.
  4. Stir everything to combine.
  5. Cook on low for 6-8 hours or on high for 3-4 hours.
  6. Before serving, shred the chicken with two forks and stir in the shredded pepper jack cheese until melted.
  7. Serve hot and enjoy!

Notes

Don’t skip sautéing the garlic for added flavor. Serve with a sprinkle of cilantro and a squeeze of lime for extra freshness.
