A cozy and comforting lasagna soup made with Italian sausage, cheese, and all the classic flavors of lasagna, simmered slowly in a crockpot.

Ingredients
  

Main Ingredients
  • 1 lb Italian sausage Can substitute with ground turkey or plant-based sausage.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced Toasted for extra flavor.
  • 28 oz can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups uncooked lasagna noodles, broken into pieces Can use leftover pasta.
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese Add towards the end of cooking.
  • Fresh basil for garnish Adds flavor and presentation.

Method
 

Preparation
  1. In a skillet, cook the Italian sausage over medium heat until browned. Drain any excess fat.
  2. Transfer the cooked sausage to a crockpot and add chopped onion and minced garlic.
  3. Stir in crushed tomatoes, broth, broken lasagna noodles, Italian seasoning, salt, and pepper.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. About 15 minutes before serving, stir in shredded mozzarella cheese until melted.
Serving
  1. Serve hot, garnished with fresh basil.

Notes

Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. Reheat on the stove or in the microwave. Optional: Add red wine or crushed red pepper for more flavor.
