Ingredients
  

For the Chicken
  • 4 pieces small to medium chicken breasts (or 2 large halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
For the Sauce
  • 3-4 cloves garlic, minced
  • 1 cup light cream or heavy cream Half-and-half can be used for a lighter option.
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese, grated
  • 1 cup spinach, chopped (optional)

Method
 

Preparation
  1. Season chicken with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add chicken and cook for 5-6 minutes per side until golden and crispy.
  4. Remove from the skillet and set aside.
Make the Creamy Garlic Sauce
  1. Lower heat and add minced garlic to the pan. Sauté for 30 seconds.
  2. Pour in cream, stirring continuously.
  3. Add Italian seasoning and parmesan cheese, mixing until smooth.
  4. Stir in chopped spinach (if using) and simmer for 2-3 minutes.
Combine and Serve
  1. Return the cooked chicken to the pan, spooning sauce over the top.
  2. Simmer for 1 minute, then remove from heat.
  3. Serve hot with pasta, roasted vegetables, or mashed potatoes.

Notes

For leftovers, store in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. Reheat gently in a skillet, adding a splash of cream to revive the sauce.
