Ingredients
  

For the Chicken
  • 4 pieces small to medium chicken breasts (or 2 large halved)
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons olive oil
For the Sauce
  • 3-4 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese, grated
  • 1 cup spinach, chopped (optional)

Method
 

Preparation
  1. Season chicken with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add chicken and cook for 5-6 minutes per side until golden and crispy.
  4. Remove from the skillet and set aside.
Making the Sauce
  1. Lower the heat and add minced garlic to the pan. Sauté for 30 seconds.
  2. Pour in cream, stirring continuously.
  3. Add Italian seasoning and parmesan cheese, mixing until smooth.
  4. Stir in chopped spinach (if using) and simmer for 2-3 minutes.
Combining and Serving
  1. Return the cooked chicken to the pan, spooning sauce over the top.
  2. Simmer for 1 minute, then remove from heat.
  3. Serve hot with pasta, roasted veggies, or mashed potatoes.

Notes

Fry the chicken in batches if your pan is small. This helps maintain his crispy goodness. Also, toast the garlic to elevate the flavor. It's great with creamy pasta or roasted vegetables.
