  • 4 breasts 4 chicken breasts
  • 1 cup 1 cup breadcrumbs Panko breadcrumbs for extra crunch recommended.
  • 1/2 cup 1/2 cup Parmesan cheese, grated Can substitute with grated mozzarella or nutritional yeast for a vegan twist.
  • 2 large 2 eggs Beaten for dipping.
  • 1 teaspoon 1 teaspoon garlic powder Toasted garlic for additional flavor recommended.
  • 1 teaspoon 1 teaspoon salt
  • 1/2 teaspoon 1/2 teaspoon black pepper
  • as needed for frying Oil for frying

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Set up a breading station: In one bowl, beat the eggs; in another, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
Breading and Cooking
  1. Dip each chicken breast into the egg, then coat it with the breadcrumb mixture, pressing it on to adhere.
  2. Heat oil in a skillet over medium heat and add the breaded chicken. Cook for 3-4 minutes on each side until golden brown.
  3. Transfer the chicken to a baking sheet and bake in the preheated oven for about 15-20 minutes or until the chicken is cooked through.
Serving
  1. Serve with a side salad or pasta.

Notes

For storage, keep in the fridge for about 3-4 days in an airtight container. For longer storage, freeze for up to 3 months.
