  • 4 pieces chicken breasts Pounded lightly for tenderness
  • 1 cup Romano cheese, grated Can substitute with Parmesan
  • 1 cup breadcrumbs
  • 2 pieces eggs, beaten
  • 1 piece lemon, zested and juiced For a zesty flavor
  • to taste Salt and pepper
  • as needed Olive oil for baking Drizzled on baking sheet

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, combine breadcrumbs, grated Romano cheese, lemon zest, salt, and pepper.
  3. In another dish, beat the eggs and stir in the lemon juice.
Coating Chicken
  1. Dip each chicken breast into the egg mixture, then coat it in the breadcrumb mixture.
  2. Place the coated chicken on a baking sheet that you’ve drizzled with olive oil.
Baking
  1. Bake for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown.
  2. Serve warm with lemon wedges for that extra zing!

Notes

For a fresh twist, try using different citrus fruits like orange or lime. Garnish with fresh parsley to enhance presentation.
