  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 2 pieces eggs, beaten
  • as needed Olive oil spray For coating

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  3. Dip each chicken breast into the beaten eggs, coating well.
  4. Then, coat each breast in the breadcrumb mixture, pressing gently to adhere.
  5. Place the coated chicken breasts on a baking sheet lined with parchment paper.
  6. Lightly spray the chicken with olive oil.
  7. Bake for 25-30 minutes or until the chicken is cooked through and the coating is golden brown.

Notes

Store leftovers in the fridge for up to 3-4 days in an airtight container, or freeze for up to 3 months. Heat in the oven to maintain crispiness.
