  • 1 pound rotisserie chicken, shredded
  • 1 medium chopped onion
  • 1.5 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 cans (15-ounce) Great Northern beans, drained and rinsed
  • 14.5 ounces chicken broth
  • 2 cans (4-ounce) diced green chiles
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 0.5 teaspoon pepper
  • 0.25 teaspoon cayenne pepper
  • 1 cup sour cream
  • 0.5 cup heavy whipping cream

Method
 

Cooking
  1. In a large saucepan, sauté the onion and garlic powder with the olive oil until the onions are nice and translucent.
  2. Add in the shredded chicken, beans, broth, chiles, and seasonings. Bring everything to a boil.
  3. Reduce the heat to a simmer and let it cook for another 30 minutes, uncovered.
  4. Remove from heat and stir in the sour cream and heavy cream.

Notes

Top with shredded cheese, tortilla chips, green onions, or lime wedges for added flavor. Letting the chili sit after cooking will deepen the flavors. Avoid overcooking to keep beans soft but not mushy.
