Sauce Ingredients
  • 1 cup Cashews, soaked Soak in water for at least 2 hours
  • 1/2 cup Sun-dried tomatoes Use oil-packed for more flavor
  • 2 cloves Garlic, minced Adjust to taste
  • 2 tablespoons Olive oil Extra virgin for best flavor
  • 1 cup Vegetable broth Low-sodium preferred
  • 1/4 cup Nutritional yeast For a cheesy flavor
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Pepper To taste
Garnish
  • 1 tablespoon Fresh basil For garnish
  • 2 tablespoons Vegan parmesan For garnish
  • 1/4 teaspoon Red pepper flakes For garnish, adjust for spice level

Method
 

Cooking Pasta
  1. Cook the pasta according to package instructions. Drain and set aside.
Making the Sauce
  1. In a blender, combine soaked cashews, sun-dried tomatoes, garlic, olive oil, vegetable broth, nutritional yeast, salt, and pepper. Blend until smooth and creamy.
  2. In a pan, heat the sauce over medium heat until warmed through.
Combining Ingredients
  1. Add the cooked pasta to the sauce and toss to coat.
Serving
  1. Serve garnished with fresh basil, vegan parmesan, and a sprinkle of red pepper flakes.
