Ingredients
  

Pasta and Sauce
  • 8 oz spaghetti or fettuccine Any pasta type can be used.
  • 1 cup ripe tomatoes (diced) Fresh tomatoes preferred, canned can be used in a pinch.
  • 1 cup heavy cream For a vegan option, use coconut or cashew cream.
  • 4 cloves fresh garlic (minced) Fresh garlic is recommended; pre-minced is a time saver.
  • 2 tbsp extra virgin olive oil For sautéing garlic.
  • 1/4 cup fresh basil (chopped) For garnish.
  • Salt and pepper to taste

Method
 

Cooking the Pasta
  1. Boil salted water in a large pot and cook the pasta according to package instructions until al dente. Drain and set aside.
Making the Sauce
  1. In a large skillet, heat olive oil over medium heat. Sauté the minced garlic until golden brown.
  2. Add diced tomatoes, salt, and pepper. Simmer for about 5 minutes.
  3. Lower the heat and stir in heavy cream until well blended.
Combining and Serving
  1. Toss cooked pasta in the sauce until evenly coated.
  2. Serve topped with fresh basil and optional grated Parmesan cheese.

Notes

This pasta keeps well in the fridge for about 3-4 days. Store it in an airtight container and reheat gently. Add a splash of pasta water to loosen if necessary.
