  • 1 package gnocchi Use your favorite brand.
  • 2 cups fresh spinach Can substitute with kale or chard.
  • 1 cup feta cheese, crumbled Feta adds a salty flavor.
  • 1 cup heavy cream For a lighter version, substitute half with broth.
  • 2 cloves garlic, minced Garlic adds aroma and flavor.
  • 2 tablespoons olive oil For sautéing garlic and spinach.
  • to taste Salt and pepper Season as per preference.

Method
 

Cooking the Gnocchi
  1. In a large pot, bring salted water to a boil and cook gnocchi according to package instructions. Drain and set aside.
Preparing the Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  2. Add spinach to the skillet and cook until wilted.
  3. Pour in the heavy cream and bring to a simmer.
  4. Stir in the feta cheese and season with salt and pepper.
Combining and Serving
  1. Add the cooked gnocchi to the skillet and gently toss to combine.
  2. Cook for an additional 2-3 minutes until heated through.
  3. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently; add a splash of cream if necessary.
