Cooking the Gnocchi
- In a large pot, bring salted water to a boil and cook gnocchi according to package instructions. Drain and set aside.
Preparing the Sauce
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add spinach to the skillet and cook until wilted.
- Pour in the heavy cream and bring to a simmer.
- Stir in the feta cheese and season with salt and pepper.
Combining and Serving
- Add the cooked gnocchi to the skillet and gently toss to combine.
- Cook for an additional 2-3 minutes until heated through.
- Serve immediately and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently; add a splash of cream if necessary.
