  • 1 cup fresh cranberries You may substitute with thawed frozen cranberries
  • 0.5 cup orange juice Freshly squeezed is recommended
  • 0.25 cup honey Adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon salt For seasoning
  • 0.5 teaspoon black pepper For seasoning
  • 1 tablespoon olive oil For searing the chicken
  • 1 piece Zest of 1 orange Enhances the flavor
  • to taste Fresh parsley For garnish, optional

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the fresh cranberries, orange juice, honey, garlic powder, salt, pepper, and orange zest.
Cooking
  1. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  2. Season the chicken breasts with salt and pepper, then sear them in the skillet for 3-4 minutes on each side until browned.
  3. Pour the cranberry-orange mixture over the chicken.
  4. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
  5. Garnish with fresh parsley if desired and serve warm.

Notes

This dish pairs well with rice or roasted vegetables. Store leftovers in the fridge for about 3-4 days.
