  • 2 tablespoons olive oil For cooking.
  • Salt and pepper to taste
  • Fresh rosemary or thyme (optional for garnish)

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix cranberry sauce and balsamic vinegar to create the glaze.
  3. Season the chicken thighs with salt and pepper.
Cooking
  1. Heat olive oil in an oven-safe skillet over medium-high heat.
  2. Sear the chicken thighs for 4-5 minutes on each side until browned.
  3. Pour the cranberry balsamic glaze over the chicken.
  4. Transfer the skillet to the oven and bake for 25-30 minutes, until cooked through.

Notes

Serve with roasted vegetables or a fresh salad. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months. Reheat in the oven until warmed through.
