Method
 

Preparation
  1. Start by cooking the cheese tortellini according to package instructions. Drain and set aside.
  2. Season the steak generously with salt, black pepper, garlic powder, and smoked paprika.
Cooking the Steak
  1. In a large skillet, heat the olive oil over medium-high heat. Add the steak and sear for about 4 minutes per side for medium-rare. Remove and let it rest.
Making the Sauce
  1. In the same skillet, melt the butter. Add the minced garlic and sauté until fragrant (don’t burn it!).
  2. Pour in the heavy cream and whole milk, stirring until well combined. Gradually add in the parmesan, letting it melt down into a creamy sauce.
Combine and Serve
  1. Toss in the cooked tortellini and sliced steak. Mix until everything is coated in that heavenly sauce.
  2. Top with parsley, red pepper flakes, and cracked black pepper for garnish, if desired. Serve hot!

Notes

Don't skip toasting the garlic — it makes all the difference! For a quick finish, prep the sauce and tortellini earlier in the day, then combine them just before serving.
