Sauce Ingredients
  • 2 tbsp olive oil Essential for searing the steak.
  • 4 tbsp butter Creates a creamy sauce base.
  • 5 cloves garlic, minced Adds aromatic richness.
  • 1 cup heavy cream Contributes a velvety smoothness.
  • 3/4 cup whole milk Balances the richness.
  • 1 1/4 cups parmesan, shredded or freshly grated Brings a savory flavor.

Method
 

Preparation
  1. Boil a pot of water and add tortellini. Cook until they float, about 3-5 minutes. Drain and set aside.
  2. Rub the steak with salt, black pepper, garlic powder, and smoked paprika.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat. Add the steak and cook for 4-5 minutes per side for medium-rare. Remove and let rest.
  2. In the same skillet, melt butter. Add minced garlic and sauté until fragrant.
  3. Pour in heavy cream and whole milk. Stir in the parmesan until melted and smooth.
  4. Add the tortellini to the sauce, tossing gently to coat.
  5. Cut the rested steak into strips and lay it atop the creamy tortellini.
  6. Top with parsley and a sprinkle of red pepper flakes for an extra kick, if desired.

Notes

Use freshly grated parmesan for creaminess and flavor. Adjust spiciness according to preference. You can substitute steak with chicken or tofu.
