- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and sauté until fragrant.
- Stir in the parsley, chives, smoked paprika, salt, and pepper.
- Toss in the chicken pieces and cook until golden brown and cooked through, about 8-10 minutes.
- Coat the chicken bites in the cowboy butter sauce and serve warm.
Notes
Best served warm over rice or alongside roasted veggies. Can be made ahead of time and reheated. Store leftovers in the fridge for 3-4 days or freeze for up to a month.
