Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced chicken breast to the skillet. Season with salt, pepper, and dried oregano. Cook until the chicken is browned and cooked through (about 5-7 minutes).
- Stir in the marinara sauce and bring to a simmer. Let it bubble for a couple of minutes.
- Turn off the heat and mix in the cottage cheese until well combined. Top with shredded mozzarella and sprinkle with grated Parmesan.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and garnish with fresh basil before serving.
Notes
Store leftovers in an airtight container; keeps well in the fridge for 3-4 days or frozen for up to 2 months. Reheat in the microwave or oven for best results.
