  • 1 cup cottage cheese Use low-fat or full-fat as per preference
  • 2 cups fresh spinach (chopped) Can substitute with frozen spinach, thawed and drained
  • 4 large eggs Whisk until frothy for a fluffier quiche
  • 1 cup shredded cheddar cheese (divided) Use your favorite cheese varieties if desired
  • 1 small onion (finely chopped) Sauté for better flavor
  • 1 teaspoon garlic powder Add to taste
  • ½ teaspoon salt Adjust according to taste
  • ½ teaspoon black pepper Freshly ground enhances flavor
  • Nonstick cooking spray For greasing the baking dish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté the chopped onion in a pan over medium heat until softened, about 5 minutes.
  3. In a large bowl, combine cottage cheese, sautéed onion, spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Mix well.
  4. Pour the mixture into the greased baking dish and top with the remaining cheddar cheese.
  5. Bake for 30-35 minutes until set and golden brown on top.
  6. Let cool slightly before slicing.

Notes

For serving, pair with a salad and crusty bread. Store leftovers in the fridge for up to 3-4 days or freeze for up to three months. Reheat in the oven or microwave.
