Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 4 tablespoons unsalted butter softened, at room temperature
  • 1/2 cup granulated sugar
  • 2 tablespoons granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Mix-ins
  • 10 pieces Oreo or chocolate sandwich cookies coarsely chopped
  • 1/2 cup white chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F and line baking sheets with parchment paper or silicone mats.
  2. In a small bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
  3. In a larger bowl, beat the softened butter and sugar on medium speed until blended.
  4. Add the egg and vanilla extract, and mix until smooth.
  5. Gradually add the dry ingredients and mix just until combined—don’t overdo it!
  6. Fold in the chopped Oreos and white chocolate chips.
  7. Use a small cookie scoop to shape your cookies and lightly press down on each.
Baking
  1. Bake for 8–10 minutes or until the edges look set.
  2. Let cool for a few minutes before transferring to a cooling rack.

Notes

Patience makes the flavor better! Store in an airtight container at room temperature for up to 5 days, or refrigerate for an additional 1-2 days. Can freeze for up to a month.
