  • 3 cups cooked white rice Substitute with brown rice for nuttiness.
  • 2 cups shredded cooked chicken Use rotisserie chicken or leftover turkey.
  • 1 can cream of chicken soup Low-sodium or homemade alternatives.
  • 1 can French onion soup
  • 1 cup sour cream Dairy-free yogurt can be used.
  • 1 cup shredded cheese Mozzarella for milder taste, Swiss for nuttier.
  • 1 cup French fried onions Divide for topping and inside the casserole.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1/4 cup chopped parsley For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, and seasonings. Mix well!
  3. Stir in shredded cheese and half of the French fried onions for that delicious crunch.
  4. Pour the mixture into a greased baking dish.
  5. Top with the remaining French fried onions for extra crispiness.
  6. Bake for about 30-35 minutes, or until bubbly and golden brown.
  7. Once out of the oven, sprinkle with chopped parsley and enjoy!

Notes

Got leftovers? This dish keeps nicely in the fridge for 3-4 days. It also freezes well—just thaw in the fridge overnight and reheat in the oven.
