Ingredients
  

Protein
  • 2 lbs chicken thighs (or beef, if you prefer) Feel free to choose your preferred protein.
Vegetables
  • 3 cups root vegetables (like carrots, potatoes, or sweet potatoes) Any combination of root vegetables can be used.
  • 1 onion, chopped
  • 3 cloves garlic, minced Consider toasting for enhanced flavor.
Broth and Seasoning
  • 4 cups low-sodium broth Can be chicken or vegetable broth.
  • 1 tsp thyme, dried
  • 1 tsp rosemary, dried
  • Salt and pepper to taste

Method
 

Preparation
  1. Chop your veggies and toss them into the crockpot.
  2. Place your chicken or beef on top of the veggies. Give it a little salt and pepper love.
  3. Sprinkle in the minced garlic, thyme, and rosemary.
  4. Cover everything with the broth.
Cooking
  1. Set your crockpot to low for 6-8 hours or high for 3-4 hours.

Notes

Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months. Reheat before serving.
