Preparation
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry and fit it into a greased baking dish.
- In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract until smooth. Fold in the mini chocolate chips.
- Spread the ricotta mixture evenly over the puff pastry crust.
- Roll out another sheet of puff pastry and place it over the filling. Seal the edges well.
- Brush the top with the beaten egg.
Baking
- Bake for 25-30 minutes or until the top is golden brown.
- Allow to cool, then cut into squares. Dust with confectioners' sugar before serving, if desired.
