  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour Sifted before measuring.
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Topping
  • 1/4 cup granulated sugar For topping.
  • 1 tablespoon cinnamon For topping.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  3. Add in the eggs and vanilla extract, whisking until fully combined.
  4. In a separate bowl, mix flour, baking powder, cinnamon, and salt. Gradually add these dry ingredients to the wet ingredients, stirring until just combined.
  5. Spread the batter evenly into the prepared baking dish.
  6. In a small bowl, mix the granulated sugar and cinnamon for the topping, then sprinkle it evenly over the blondie batter.
  7. Bake for 20-25 minutes, or until golden and a toothpick comes out clean.
  8. Allow to cool before slicing into squares and serving.

Notes

For a richer flavor, brown the butter before adding sugars. Underbake slightly for a gooey texture. You can add nuts or chocolate chips for variation.
