- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
- Add in the eggs and vanilla extract, whisking until fully combined.
- In a separate bowl, mix flour, baking powder, cinnamon, and salt. Gradually add these dry ingredients to the wet ingredients, stirring until just combined.
- Spread the batter evenly into the prepared baking dish.
- In a small bowl, mix the granulated sugar and cinnamon for the topping, then sprinkle it evenly over the blondie batter.
- Bake for 20-25 minutes, or until golden and a toothpick comes out clean.
- Allow to cool before slicing into squares and serving.
Notes
For a richer flavor, brown the butter before adding sugars. Underbake slightly for a gooey texture. You can add nuts or chocolate chips for variation.
