  • 1 cup brown sugar Use light brown sugar for a richer flavor.
  • 1/2 cup granulated sugar Cut back for less sweetness if desired.
  • 2 large eggs Use room temperature for better emulsification.
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour Can be substituted with gluten-free flour blend.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon Add extra for topping if desired.
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (180°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, mix together the melted butter, brown sugar, and granulated sugar until well combined.
  3. Add the eggs and vanilla extract, whisking until smooth.
  4. In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared baking dish and spread evenly.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool before cutting into bars and serving.

Notes

Store any leftovers in an airtight container for about 5 days in the fridge or freeze for up to 3 months. Reheat in the microwave for about 15 seconds if you prefer them warm again.
