Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In another bowl, cream the softened butter with granulated and brown sugars until fluffy.
- Beat in the egg and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- For the filling, combine the brown sugar and cinnamon in a small bowl.
Baking
- Spread half of the dough on parchment paper, sprinkle with cinnamon filling, and roll it up tightly.
- Slice into rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until golden brown. Let cool before serving.
Notes
Serve warm and optionally drizzle with icing made of powdered sugar and milk. Store in an airtight container for up to a week at room temperature, or freeze for up to a month. Reheat in the microwave for a fresh-baked taste.
