Ingredients
  

For the Cookies
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract

  • ½ cup brown sugar, packed For filling
  • 2 tsp ground cinnamon For filling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter with granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. For the filling, combine the brown sugar and cinnamon in a small bowl.
Baking
  1. Spread half of the dough on parchment paper, sprinkle with cinnamon filling, and roll it up tightly.
  2. Slice into rounds and place them on a baking sheet lined with parchment paper.
  3. Bake for 10-12 minutes, or until golden brown. Let cool before serving.

Notes

Serve warm and optionally drizzle with icing made of powdered sugar and milk. Store in an airtight container for up to a week at room temperature, or freeze for up to a month. Reheat in the microwave for a fresh-baked taste.
