Preparation
- In a large mixing bowl, combine the flour, salt, and yeast.
- Gradually add the warm water and stir until a shaggy dough forms.
- Cover the bowl with plastic wrap or a kitchen towel and let it rise at room temperature for 8 to 24 hours until bubbly and doubled in size.
Shaping and Baking
- Once risen, flour a work surface and gently turn the dough out.
- Divide the dough into pieces and shape them into loaves.
- Let the loaves rest for about 30 minutes.
- Preheat your oven to 450°F (230°C) and place a baking stone or an inverted baking sheet inside.
- Transfer the loaves onto the hot surface and bake for 20-25 minutes or until golden brown and hollow-sounding when tapped.
- Let them cool before slicing.
Notes
Don’t rush the rising time! A longer rise results in that signature ciabatta texture. Serve with olive oil and balsamic dip or use for sandwiches.
