  • 2 teaspoons salt
  • 1 teaspoon instant yeast
  • 1 ¾ cups warm water Aim for a temperature that is warm, not hot.

  1. In a large mixing bowl, combine the flour, salt, and yeast.
  2. Gradually add the warm water and stir until a shaggy dough forms.
  3. Cover the bowl with plastic wrap or a kitchen towel and let it rise at room temperature for 8 to 24 hours until bubbly and doubled in size.
Shaping and Baking
  1. Once risen, flour a work surface and gently turn the dough out.
  2. Divide the dough into pieces and shape them into loaves.
  3. Let the loaves rest for about 30 minutes.
  4. Preheat your oven to 450°F (230°C) and place a baking stone or an inverted baking sheet inside.
  5. Transfer the loaves onto the hot surface and bake for 20-25 minutes or until golden brown and hollow-sounding when tapped.
  6. Let them cool before slicing.

Notes

Don’t rush the rising time! A longer rise results in that signature ciabatta texture. Serve with olive oil and balsamic dip or use for sandwiches.
