Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Toss your fresh veggies with olive oil and your chosen spices in a large bowl.
  3. Spread the veggies on a baking sheet in a single layer.
  4. Sprinkle seasoned breadcrumbs and cheese on top.
  5. Roast for 20-25 minutes until golden brown and tender.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. If making ahead, keep the veggies separate until ready to roast.
