- Cook the chow mein noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Toss in the mixed vegetables and protein (if using) to the skillet. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.
- Add the cooked noodles to the skillet, followed by the soy sauce, oyster sauce, and sesame oil. Toss everything together to combine.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
For an extra flavor boost, consider serving with spring rolls, a sprinkle of sesame seeds, or a side of sweet chili sauce. Leftovers can be stored in the fridge for 3-4 days or frozen for about a month. To reheat, use a splash of water to revive the noodles.
