Ingredients

For the Yogurt Mixture
  • 1.5 cups chopped strawberries Use fresh strawberries for best flavor and texture.
  • 1 cup plain Greek yogurt Substitute with dairy-free yogurt for a vegan option.
  • 1 tbsp honey Can be omitted for a vegan version.
  • 1 tsp vanilla extract
For the Chocolate Coating
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil Can substitute with light oil like vegetable or canola.

Method

Preparation
  1. In a large bowl, add chopped strawberries, Greek yogurt, honey, and vanilla extract. Combine thoroughly.
  2. Scoop about 2 tablespoons of the yogurt mixture onto a parchment paper-lined baking sheet to form clusters, aiming for about 10 clusters.
  3. Freeze the baking sheet with the yogurt clusters until completely solid, about 1-2 hours.
Chocolate Coating
  1. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 15 to 30-second intervals, stirring in between, until melted.
  2. Remove the frozen yogurt clusters from the freezer and dunk each one into the melted chocolate using a spoon for an even coat.
  3. Place the coated clusters back on the prepared baking sheet and optionally sprinkle a bit of sea salt on top.
  4. Freeze for a few more minutes to harden the chocolate.

Notes

Store the clusters in the freezer for up to 2 weeks in an airtight container. Best enjoyed straight from the freezer.
