Ingredients
  

Blondie Base Ingredients
  • 1 1/3 cups all-purpose gluten-free flour blend
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon baking soda
  • 1 1/4 cups packed light brown sugar
  • 8 tablespoons unsalted butter (at room temperature)
  • 2 large eggs (at room temperature, beaten)
  • 1 large egg white (at room temperature, beaten)
  • 2 teaspoons pure vanilla extract
Cheesecake Layer Ingredients
  • 8 ounces cream cheese (at room temperature)
  • 1/2 cup granulated sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon kosher salt
  • 1 large egg (at room temperature)
Topping Ingredients
  • 4 ounces miniature chocolate chips

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C) and line a 9-inch square baking pan with greased aluminum foil.
  2. In a bowl, mix together the gluten-free flour, xanthan gum, salt, and baking soda.
  3. In another bowl, cream the butter and brown sugar until fluffy. Add in the beaten eggs and vanilla.
  4. Gradually combine the dry ingredients with the wet until mixed.
  5. Beat the cream cheese until smooth, then mix in the granulated sugar, remaining vanilla, and kosher salt. Finally, fold in the beaten egg.
Assembly
  1. Spread half of the blondie batter in the pan, dollop the cheesecake mixture on top, and finish with the remaining blondie batter.
  2. Sprinkle the chocolate chips on top.
Baking
  1. Bake for 30-35 minutes or until set.

Notes

These blondies pair exceptionally well with vanilla ice cream or chocolate sauce. Keep an eye on them while baking to avoid overbaking for a soft center.
