  • 4 pieces chicken thighs Bone-in, skin-on recommended for flavor.
  • 1/4 cup chipotle honey sauce Can adjust based on spice preference.
For the Mashed Potatoes
  • 2 pounds potatoes, peeled and diced Use starchy potatoes for best results.
  • 1 cup smoked gouda cheese, shredded Substitute with regular gouda or cheddar if necessary.
  • 1/2 cup milk Use nut milk for a vegan option.
  • 4 tablespoons butter Use vegan butter for a vegan option.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Marinate the chicken thighs in chipotle honey sauce for at least 30 minutes.
Cooking
  1. Place the marinated chicken thighs on a baking sheet and bake for 25-30 minutes until cooked through and caramelized.
  2. Meanwhile, boil the diced potatoes in salted water until tender.
  3. Drain the potatoes and return them to the pot. Add butter, milk, and smoked gouda cheese. Mash until creamy and smooth.
  4. Season the mashed potatoes with salt and pepper to taste.
  5. Serve the baked chicken over the smoked gouda mashed potatoes.

Notes

For extra flavor, marinate the chicken overnight. Use a potato ricer for creamier mashed potatoes. Leftovers can be stored in an airtight container for 3-4 days in the fridge or frozen for up to 2 months.
